How could you possibly not love this cocktail? For starters the name is charming and the combination of gin and apple brandy along with fresh lemon, grenadine and egg white is brilliant. I'm drawn to sour cocktails in general and egg whites help mellow them a bit and of course give them that smooth, glossy texture. I recommend dipping those brandied cherries in that beautiful foam before you eat them. 

One small note, it 's really important to use fresh egg whites when eating them raw. I have five beautiful hens that provide me with fresh eggs. If you can buy eggs from a farmers market or source them in your area that would be the best approach to making cocktails with raw egg whites. A tip on how you can tell if they're fresh, they will impart no flavor just great texture.

Ingredients

1 1/2 oz Plymouth Gin

1/2 oz Laird's Bonded Apple Brandy

3/4 oz lemon juice

3/4 oz simple syrup

1/4 oz grenadine

1 egg white

Garnish with 3 brandied cherries on a cocktail stick

Preparation

Dry shake all the ingredients, then shake again with ice. Double strain into a rocks glass over 1 large ice cube. Garnish with the cherries.
